An Anoxic Water Pillow is a coffee fermentation technique using a plastic sheet placed over coffee cherries in a tank, with cold water poured on top to create a seal and a low-oxygen (anoxic) environment. This method was developed by Miguel at the El Fenix community wet mill, crowdfunded by Raw Material, and allows producers to control fermentation time and temperature while improving coffee quality. After fermentation, the cherries are pulped, washed, and dried to produce specialty coffee with complex flavor.
