Sourced from handpicked, naturally tree-dried coffee cherries—primarily those reaching peak overripeness (70%)—this standout lot is the result of a precisely timed 72-hour fermentation process. By applying Saccharomyces cerevisiae yeast and fermenting the cherries under cover in carefully managed heaps, the process draws out rich sweetness and layers of complexity that set this coffee apart.
Mió is a coffee farm in Monte Santo de Minas, Brazil, that exports, imports, stores, and sells coffee.
Spanning a total of 1,589 hectares, a third of the land is used for the coffee processing and milling facilities, some pasture areas and the plantation of eucalyptus trees, which is home to some lovely bees. The rest of the land is equally divided between the coffee trees and the native forest reserve. With plenty of spring water in the estate, one of Mió’s responsibilities is to not only maintain the water flow but to also improve water quality.
Dedicating the same amount of land to the coffee as to the native forest helps preserve the natural characteristics of the area. The farm is located between Southern Minas Gerais and the High Mogiana region. Two distinct terrains, one bringing a citric acidity, the other a full body and sweetness to Mió’s coffee.
Mio pride themselves on a 100% traceability guarantee for the entire crop every year. Each stage of the journey, from where the cherries were harvested, which trucks moved them, how and when they were processed, is tracked using satellite imagery. I have been drinking various coffee from Monkey Board but without doubt the Italian Monkey is by far my favourite. I prefer a stronger bean and this gives strength and richness without the bitterness. Haven’t found anything else to match it

This is a really good coffee. Smooth, but very interesting, with plenty of flavour going on. I found this coffee to be very satisfying.
I'm enjoying this as my daily decaff coffee. I use 14g on a moderate grind with 220ml water and 3 minute brew on my Aeropress to bring out the sweetness. Still experimenting with this though!
Nothing touches this coffee tried allsorts of brands but this is the best by far I use the beans in my machine and but an extra packet for my aero press which I take fishing awesome taste and flavour
