The processing method involves selective harvesting, where only ripe cherries are collected to ensure quality. This is followed by a dual fermentation process: The first fermentation occurs while the cherries are still whole, the second fermentation takes places after pulping. Yeast is applied to enhance the flavour absorption. Throughout the process, strict quality control is maintained by monitoring temperature, fermentation time and oxidation levels.
